  1. Make the chilli paste

    Preheat the oven to 200 degrees C. Halve the red chilli, remove the seeds and stalk, then blend it with the tomato puree, olive oil, and peeled garlic cloves to make a smooth paste.
  2. Coat the chicken

    Toss the chicken drumsticks with the chilli paste until evenly coated.
  3. Build the tray

    Arrange the chicken and new potatoes in a single layer in a roasting tray. Season with salt and black pepper, add the thyme sprigs, then mix everything together with your hands.
  4. Roast the chicken and potatoes

    Roast for 30 minutes, until the chicken has started to brown and the potatoes are beginning to soften.
  5. Add pancetta and tomatoes

    Scatter over the pancetta and roast for another 15 minutes. Add the tomatoes, then roast for a final 15 minutes, until the chicken is cooked through, the potatoes are tender, and the tomatoes have softened.
  6. Serve

    Rest briefly, then serve with grated Pecorino Romano if you want the sharper amatriciana-style finish.

Notes
