Baked Turkey Rolls With Buffalo Sauce

  1. Cook the turkey

    Heat 1 tablespoon oil in a pan. Fry the turkey mince until cooked through and any excess moisture has evaporated.
  2. Season the filling

    Stir in the buffalo sauce towards the end of cooking, then transfer the turkey to a bowl. Mix in the chives, parsley, dill, onion powder, garlic powder, salt, Cheddar, and blue cheese.
  3. Soften the wrappers

    Preheat the oven to 220 degrees C. Dip each rice paper sheet briefly into cold water, then lay it on a damp tea towel until flexible.
  4. Roll the parcels

    Put 2 to 3 tablespoons of filling on the third of each wrapper closest to you. Fold and roll tightly like a small tortilla wrap, enclosing the filling.
  5. Bake until crisp

    Brush the rolls lightly with oil and arrange them on a lined tray. Bake for 15 minutes, until the wrappers are golden and crisp at the edges.
  6. Mix the dip

    Mix the sour cream with chopped fresh coriander, chives, crushed garlic, onion powder, and lime juice.
  7. Serve

    Serve the hot rolls with the lime sour cream dip and extra buffalo sauce if you want more heat.

Notes

The source gives 4 to 6 tablespoons buffalo sauce; 5 tablespoons is the middle point. The dip source quantity was 1 cup sour cream, recorded here as about 240 ml.
