Stiff Whipped Cream

Cold double cream whisked with icing sugar and optional vanilla until spoonable or stiff enough to hold its shape.

Chill the bowl and whisk for 5 minutes to 10 minutes if you can.

Pour in the cold double cream.

Add icing sugar and vanilla.

Whisk until it forms soft peaks for a spoonable cream, or stiff peaks if you want it to hold its shape.

Stop as soon as it looks thick and billowy. If you keep whisking, it can turn grainy and start becoming butter.

Notes

Use 1 to 2 tablespoons icing sugar, to taste. Vanilla extract is optional.
